A drinks reception is the only catering format where the drink comes first. People arrive, they are handed a glass, and the food meets whatever is already in their mouth. Get that meeting right and both things taste better than they would alone. Get it wrong and an excellent canapé tastes of nothing.
You do not need a sommelier for this. Three principles cover almost every decision.
The three principles
Cut richness with acid or bubbles. Anything fatty, fried, creamy or cured wants something sharp against it. This is why champagne and fried food is such a reliable combination, and why a rich canapé with a heavy red is hard work.
Match intensity, not flavour. The common mistake is trying to echo a flavour — something citrusy with a citrus drink. What actually matters is weight. A delicate vegetable bite is flattened by a big oaky drink; a robust, earthy canapé makes a light spritz taste like water.
Mind what the bubbles do. Carbonation amplifies salt and heat. A very salty canapé with a dry sparkling wine can tip into harsh. It also scrubs the palate clean, which is why fizz suits a long reception with varied food.

Building a reception drinks list backwards
If the drink is fixed — a sponsor's champagne, a client's preference, a bar you cannot change — choose the food to suit it.
Sparkling wine or champagne throughout. The most forgiving option. Lean into fried, cured and creamy things, and keep the very salty items in proportion.
A single cocktail served on arrival. Match the food to that one drink for the first half hour, then broaden as people move onto wine or soft drinks.
Wine only, white and red. Give the reds something with savoury weight to work with. A tray of purely delicate vegetable canapés next to a bold red pleases nobody.
Mostly non-alcoholic. Increasingly common, and worth planning properly rather than treating as an afterthought. Zero-proof bitters, a good tonic, or a sharp cordial and soda all give you the acid a rich canapé needs. Sweet soft drinks do not, and they make savoury food taste odd.
Two things that quietly ruin pairings
Serving canapés too cold. Straight from the fridge, everything tastes muted and no pairing will rescue it. Fifteen minutes out of the box before service makes a genuine difference.
Putting the sweet canapés out with the savoury from the start. They get eaten alongside a dry drink at the wrong moment, and there is nothing to finish on. Hold them until around an hour in.
